Eating Our Way Through Coronado

Not everyone can have a gourmet chef on hand 24/7.

Butt somehow… the stars aligned and I was blessed to have a personal chef, a cabana boy, a masseuse, and a chauffeur all rolled into one delectable husband!

Today’s blog will focus on his Chef talents – we’ll leave the other talents for another blog 😉

Jay, thankfully, loves to cook. Absolutely loves it. And I absolutely love that he loves it… because I do not.

In fact, the only meals I truly prepare are:

1. Peanut Butter and “fill-in-the-blank” (jelly, marshmallow, banana) sandwiches when we’re on the road; and

2. Breakfast and dinner for our pets.

This dish has become one of our favorites! It’s pistachio-crusted salmon served with a lemon, pine-nut orzo and lemon-roasted broccoli.

During our vacation in Coronado, we pretty much ate at The Tinkerbell Teahouse & Taproom (hmmmm… I need a logo!)

A new addition to Chef Jay’s repertoire: avocado whole wheat toast with hard boiled egg, sprouts and tomatoes.

Chef Jay made some of his “usual fare” …

Poached eggs on crusty, sourdough toast with a side of bacon.

…and a new dinner! We found a recipe for scallops piccata in a magazine. Jay hunted and gathered the ingredients and introduced us to a new dish we just love!

Pan seared scallops over angel hair pasta with capers and spinach and drizzled with a lemon butter sauce…. Heavenly!

We did splurge on dinner at a local joint called, “The Tavern.”

The grilled fish tacos were delicious at The Tavern.

We dined at The Tavern before seeing an energetic musical at the local theater. The show was about female songwriters and singers in the 1960’s; six cast members performed more than 30 songs across several genres. What made it even more impressive was knowing the show was conceived and written by two Coronado writers. It was fun and educational – we were entertained the entire 90 minutes!

Naturally, at some point in the trip, we found ourselves at ColdStone.

e had our go-to “Love It” concoctions: Oreo Overload and Founder’s Favorite!

I can’t believe we only had one ColdStone stop during our entire vacation. And…we didn’t have any Hostess snacks either! I can only blame the delicious fare at Tinkerbell’s Teahouse & Taproom for keeping us away from snowballs and ice cream 😉
